Notes: 100% - you can’t get more cacao than this. A single-origin chocolate that gives you a taste of only cacao on the palate; absolutely nothing else. Made with Peruvian cocoa beans, we’ve toned it down by adding lots of cocoa butter. This has produced a soft texture and gives the impression of a chocolate with an 80% cacao content, even though it’s completely pure and without any added sugar.
Fragrance notes: red berries (raspberries, strawberries), grapes, roasted nuts.
Taste notes: pleasantly bitter, fruity notes of grapes and olives, intensely nutty roast aroma and a balanced finish similar to red wine.
Conching time: 40 hrs.
