Rozsavolgyi Chocolate Maker
Hungary’s first post-Communism artisanal chocolatier was founded by a husband and wife in Budapest in 2004; since then, their team, and their collection of confections—truffles, bonbons, hot chocolate, and upwards of 20 single-origin bars with flavors like matcha, hot paprika, and black sesame—have grown with them. Head chocolate maker Katalin Csiszar also designs all packaging while her husband, a robotics engineer, manages their chocolate-making equipment. A close relationship with growers in Venezuela and Madagascar allows Rózsavölgyi to oversee the fermentation and drying processes, giving them more control over their flavor and consistency. “Our roasting is very light,” Csiszar says. “We’re trying to emphasize the natural character of the cocoa beans."
