Notes: Hacienda Azul is a small farm located in the rural town of Turrialba in the province of Cartago San Jose. It's managed by the Zeuner family and employs 8 full time people. The famed CATIE university of agriculture is located here and has provided 5 different clones to the farm. The beans are washed prior to drying and we’ve found this cacao fascinating by its versatility.
