Notes: this chocolate bar is crafted in collaboration with our friend Olivia Wu from Yishi Cacao Collective in Vancouver, BC. It features cocoa beans sourced from a single estate in Nantou, Taiwan.
What began as a deep act of love for his mother led founder Cheng-Hung Lin to plant cacao in 2014 and craft chocolate with minimal ingredients, hoping to support her heart health. Guided by the natural approach to farming, he has cultivated a thriving ecosystem where White-rumped Shamas are often seen visiting in pairs, sometimes following the farmers as they work among the trees.
Like the changing seasons, the flavour of the cacao evolves from harvest to harvest.
Tasting Notes: this bar captures the character of Nantou cacao with bright notes of lanzones, apricot, pomegranate and molasses.
