Notes: these beans were the first cocoa beans designated certified “Heirloom” by the Heirloom Cacao Preservation Initiative (HCP). Grown in the Alto Beni region in Bolivia, they are clean, well processed and the genetics of the trees themselves are fantastic.
So why sugar it down too much?
Good question. So I started playing around with higher percentage bars with these beans and 85% seemed to be a sweet spot (sorry for the pun, couldn’t resist).
Tasting notes: dried fruit and mild nuttiness
