Notes: Peru’s rare Piura Blanco (white) cocoa beans are unlike any other. It is the only variety that thrives in the desert climate, where the dry conditions concentrate its fruity flavours. When I tasted its cocoa pulp it was delicate, creamy and mild. Roasting these cocoa beans requires precision. I’ve developed a technique that balances its natural citric acidity, reminiscent of starfruit, with a soft nuttiness of almond. This careful approach allows me to use less sugar, creating a chocolate that’s both healthier and bitter-free.
