Notes: created with heirloom white cocoa beans and freeze-dried cocoa pulp, which is the sweet, tangy fruit inside the cocoa pod.
The flavour of the pulp can vary quite a lot between cocoa varieties, from being tart, sour and acidic, almost like a lime, to a very mellow, sweet, fruity flavour, similar to other tropical fruits such as mango or lychee. Due to its rich chemical composition, the pulp is used for the development of micro-organisms responsible for fermentation, which is important in the production of the aromas and flavours of cacao.
